Fresh Strawberry Frosting

Mmmmm-mmmmm!

For those who were less-ice-cream-inclined at Kourt's shower, I made a batch of chocolate cupcakes with homemade strawberry frosting. I used Connie's recipe from about him + her as my inspiration (she made blackberry frosting...sounds delicious, no?).

For the cupcakes:
I used Duncan Hines Devil's Food Cake Mix and followed the instructions on the box. These cupcakes turn out extra moist and sticky. So yummy. Make sure the cupcakes are cooled completely before frosting.

For the frosting:


What you need:
1/2 cup fresh sliced strawberries
1 cup salted butter (slightly softened)
3 1/2 cups powdered sugar
1/2 teaspoon pure vanilla extract
Heavy cream (to taste)

Instructions:
Puree strawberries in blender, set aside. Beat butter with small amount of heavy cream (think 1/2 - 1 teaspoon) until fluffy and smooth. Slowly add powdered sugar a little bit at a time. If your mixture gets too thick for liking, add additional tiny amount of heavy cream (1/2 - 1 teaspoon). Add about 3 tablespoons of strawberries, and vanilla. Mix until blended.

After frosting my cupcakes, I topped mine with a slice of strawberry. I think it really added an extra kick!

Connie from about him + her used blackberries (she also made hers a little differently, so be sure to check her's out!). I used strawberries. I imagine you could use blueberries or raspberries, too! This would be extra delicious with a cake flavor like coconut, I think. Use your imagination!

They were DELICIOUS! I highly, highly recommend you go give it a try! And yes, I love that mixer! One of our wedding gifts. I do wish I had in turquoise or light blue though haha

yum! why have I never thought to mix fresh strawberries into frosting?

I've been chowing down on strawberries like crazy for about a week, I ate an entire costco box almost by myself!

Amy, I'm kind of embarrassed it's taken me this long, too. Go put some of those strawberries to use on some frosting though...it is worth it. Have you ever done graham crackers with frosting? My cousin thinks the strawberry frosting would be extra delicious on graham crackers and I'd have to agree! Basically, cupcakes are not necessary to make some frosting!
